At Least There Wasn't Any Quinoa...

Dinner was too healthy tonight.  It tasted healthy.  Who wants that?  

I found this recipe for Cornmeal-Dusted Catfish with Quinoa Saute in a Cooking Light magazine.  Sounds fancy, doesn't it?  I've been wanting to try more quinoa (pronounced 'keen-wa') recipes because I feel like I could like it.  It's good for you and something different, right?  So far I haven't been all that impressed with quinoa, but I'm hopeful!  Jimmy, maybe not so much.  He's a good sport though and eats whatever I make (love you, babe!).  Anyway, I thought this recipe sounded like it had some potential.  

It may have been better if I'd actually used catfish.  I don't know, I've never eaten catfish.  Since I didn't have catfish in the freezer, I used tilapia instead, thinking that maybe it would be okay... 

...and then I realized that there wasn't any quinoa in my pantry.  

Uh, what was I thinking here?  

Tonight's dinner became Cornmeal-Dusted Tilapia with Brown Rice and Sauteed Vegetables... which tasted way too healthy for our liking.  Don't get me wrong, we ate it.  It was probably even good for us.  I just won't be making it again.  ;-)

So, as we were eating it, I said to Jim, "At least there wasn't any quinoa..."
His response?  "True dat."

Best. Eggsalad. Ever.

Sorry friends!  I was almost too busy picking out paint colors to remember to blog.  Almost.  Here I am!  I have been de-wallpapering our basement from this terrible atlas wallpaper and looking forward to painting the walls something fabulous.  

I hope you didn't miss me too much... I mean, I haven't really given you much chance to miss me this week, have I?  I'm on a roll, but I can't promise anything over the weekend.  You just never know what will happen on the weekend.

For now, here's a picture of the best eggsalad in the world:

Alissa's Eggsalad

It certainly is not the best picture of an eggsalad sandwich, but I think that I've officially mastered eggsalad.  Should I reveal my secrets?  To you?  Hmm... mayhaps.

First, I will say that if you know me at all you know that my all-time favorite way to eat eggsalad is on a waffle.  A homemade Belgian waffle made with the Bisquick waffle mix.  That's normal, right?  I've made other kinds of waffles, but Bisquick is best.  Just my opinion.

I generally don't like anything crunchy in my eggsalad (or tuna, for that matter, but I did break that rule last night!).  Celery is not allowed near my eggsalad at all, so if you're a celery-lover, leave now.  I've also been trying to add veggies to everything I eat, so there might be fresh spinach and scallions on the sandwich, which breaks all kinds of Alissa-laws.

Anyway, you hard-boil some eggs.  I always put a pot of water on my stove and add the eggs right away.  Once it's boiling, I let the eggs sit in the boiling water for 15 minutes.  After 15 minutes, I turn off the heat and let them sit there until the water stops boiling.  I scoop them out with a big spoon and put them into a container in the fridge.  I NEVER have to worry about the eggs being hard to peel... and there's something nice about knowing how your eggs got hard-boiled *ahem ahem* (you know who you are).

Alissa's New Eggsalad Recipe
2 Hard-boiled eggs, sliced
1 t. Light Mayo
1 Laughing Cow cheese wedge (any kind, except blue cheese or swiss-yuck?)
Season with paprika, pepper, Old Bay, and ground mustard (or none of the above if you don't like them)

Put all of the above into a bowl and mix and then add to your waffle... er, sandwich.  Pita?  Flatbread?  Whatever.

Add tomato, avocado, spinach, scallions, etc. if you're feeling particularly adventurous.  It's really that easy.  Mmm... :-)

For dinner, I may have made some more Mexi-Rice Bowls, but with organic beef and a ton of grilled veggies.  I got compliments from both my dad and hubby.  Score!  Little did not seem at all interested.  She spit out the pearl onion, part of a red pepper, and the avocado I had her attempt to eat.  She did like the meat, though.  Baby likes meat.

Finding a Balance

Well hello friends!

Remember me?  

Your good buddy who used to cook and blog about it?

Well, I've decided to come back and blog more often.  I know I've said that before, but I'm revamping my lifestyle (and that of my hubby and daughter) and want to share some new recipes as I try them out.  Here's the deal... my daughter is 18, almost 19 months old now, and I gained a ton of weight when I was pregnant.  In the past almost 19 months, I've lost about 84 pounds.  How did I do it?  A little bit of Weight Watchers, a whole lot of exercise (Stroller Strides, which is apparently now called Fit4Mom, and TurboFire), and most recently, calorie counting using an app and website called Lose It!  (I may have ditched WW when I discovered that calorie counting worked better for me... to each his own!)

I buckled down with the hubs around Thanksgiving and took off a chunk of weight that I've been struggling to lose forever.  I'm still not quite where I'd like to be, so I'm continuing the journey, just trying to invite more vegetables and grains and healthy things into our lives.  Welcome veggies!  Welcome grains!  It's good to see you!

Trying to balance protein, carbs, and good fats has been a struggle for me, but I think an important one that I need to address for my body.  So, here's what I ate last night... sorry, it's not the best picture!  

Alissa's Mexi-Rice Bowl (570 calories)
1/2 c. Brown Rice
3 oz. Ground Turkey (spiced like taco meat- you could use a seasoning packet, but I make my own)
1/4 c. Scallions
2 T. Salsa
2 T. Sour Cream
4 Grape Tomatoes (chopped)
1/4 c. Black beans (drained and rinsed)
1/8 c. Shredded Cheese (any kind- I used a Mexican blend because it's what I had!)

Now, if you wanted to cut calories even more, you could ditch the cheese or use less rice and add other things like spinach leaves or mushrooms.  Avocado or guacamole would be a yummy addition, and if you really wanted to, you could put it all in a giant burrito shell.  You could ditch the meat entirely if you are vegetarian or use Morningstar crumbles (which I sometimes love).

That's what's great about Mexican food.  It's good any way you eat it.

I also wanted to share some pictures of my new tomato and strawberry plants... now that we have a house *gasp* and it has a deck *gasp*, we have space for things like plants!  :-)

Goals:
1. Don't kill them.
2. Keep other animals away from them so we can eat the fruits!


I added the second goal yesterday when we saw two little red strawberries sitting on the railing of the deck.

I was happy to see that there was a little red strawberry still in the plant, so I picked it and shared it with my loves at breakfast.  ;-)

I checked the deck railing this afternoon and the two strawberries on the railing are both gone.  Squirrel?  Bird?  I hope you enjoyed them!  You won't be getting any more!

On that note, how do I keep birds and squirrels from getting more?  *Keep in mind that I've never been successful with plants.  Ever.  In my life.

I'm hoping to change that.

Four Months Later...

Methinks you'll have to get used to once-in-a-while appearances from me from now on... I just can't keep up like I did before!  It might be a mix between having a toddler and not trying as many new recipes now that I have some cooking skill.

Since Thanksgiving, the hubs and I have been calorie counting and really trying to whittle down our weights.  I've been looking for lots of low-cal, delicious recipes and have tried a few things recently I thought I'd share with you.  So far I've lost about 16 lbs and am officially back down to pre-preggo weight (it sure took me long enough!).

Southwestern Egg Rolls

Alissa's Alfredo Lasagna

Okay, so this might sound like it's not-so-healthy.  It really depends on what you put in it.  I made it with RF ricotta cheese, a TON of spinach, lean ground beef, mushrooms, light alfredo sauce, and no-bake noodles.  If you portion it out, it's delicious and you don't have to feel guilty about it!  :-)

I have discovered the secret to yummy, light scrambled eggs... and I'm going to share it with you right now.  Are you ready?  Laughing cow cheese.  I've had this lunch almost every day for the past two months and it's filling, full of protein, and worth every calorie.

I use 1/2 c. of egg beaters, 2 wedges of any kind of laughing cow cheese, Old Bay, and pepper.  Sometimes I add mushrooms, spinach, a touch of lean ground beef... really, anything your heart desires in scrambled eggs is okay.  I like to put it on an English muffin (high fiber) with a Mushroom Lover's Morningstar veggie burger on the side.  I'm addicted.

Top with fresh salsa and a little guac or fresh avocado.  Heavenly.

Seriously.

Quinoa Pizza Bites

These were good, but I would recommend using pepperoni slices as suggested in the recipe.  They were good without, but needed something!  I also didn't have a tiny muffin pan, so I just baked them like cookies.

Alissa's Split Pea Soup

I made this with a bag of split peas... which I didn't realize would actually split or explode all over the pot as they started cooking.  I didn't take an after picture, but I should have!  I added potato, corn, chicken/veggie broth, mushrooms, and some spices.  It ended up thick and pretty tasty.

Next up...


Green Smoothies!  I've started having these more often lately.  Usually I add whatever we have in our house... banana, apple, strawberry, blueberry, etc.  Then you load it up with spinach or kale and add ice to get it the thickness you want.  I've been making them with soy yogurt and vanilla soy milk so that Liv can drink some, too.  Always yum.

This is exactly what it says.  I made brown rice and mixed salsa into it, added black beans, and topped with tilapia (seasoned however you like).

Homemade Mexican Pizza

We are huge fans of Cheeseburger Pizza and just switched the toppings a bit to make it Mexican.  On this pizza, I used taco seasoned lean ground beef, fresh avocado, grape tomatoes, black beans, corn, and shredded cheese.

I couldn't find the exact Taste of Home recipe that I used for the tomato soup, but there are so many there!  I might have to try some others.  :-)

For Christmas, I got an immersion blender... and it's AWESOME!  Here I am using it!  :-)

Eating More Plants

Happy August!  I can't believe it's August already... once August hits, it always seems like the summer is going fast (even if it's not).  I think this summer has felt very long, partly because I've been staying home with my sweet baby girl and she's grown so much!  We've been keeping super busy, too.  It almost seems like we are busier than we were during the school year, thought I know that can't possibly be true. 

On that note, I'm sure it will seem like summer is even longer than it already has been when I don't go back to school this year.  I'm a pretty lucky girl to be able to stay home.  <3

Anyway, with summer in full swing, I've been trying to eat more plants.  Plants are tasty!  Good for roasting, grilling, salad-making, etc.  I've been thoroughly enjoying corn-on-the-cob, which I've never really appreciated before this summer.  Why?  I don't know.  It's delicious!

I also have a new appreciation for veggie burgers.  I know, right?  Who am I?  What have I done with Alissa?  Veggie burgers?  What's the world coming to?  Yeah... so, Morningstar products (at least the ones I've tried) are pretty good. 

You're probably wondering how I cooked everything.  I'm glad you asked!  I cooked it all on my grill pan.  Have I told you lately how much I love my grill pan?  I have?  ;-) 

The picture below is dinner I made tonight.  I'm not even sure what to call it... I kind of threw some things in a pan and cooked them up.  It consists of ground chicken, cream of chicken soup, pinto beans, frozen corn, garlic, and some seasonings (cumin, cayenne pepper, poultry seasoning, red pepper flakes, and a touch of garlic salt).  It's scooped over some brown rice and next to some grilled potatoes and mushrooms. 

I must also say that that's the saddest salad I think I've ever made.  It's just baby spinach and tomatoes... but it worked.  Initially I was debating about adding the spinach and mushrooms to the chicken mixture.  It probably would have been just as good.  By the way, this was a success!  Hubby liked it and even went back for seconds.  :-)  That's always a good sign.

Mish Mash!

Hi there!  It's been a while, I know.  I've been revamping my eating/cooking again... but this particular post might be a mish mash of things I've cooked recently.  To start us off, here's a picture of some cauliflower my lovely hubby bought at the store:


While it does seem to be very fun, it kind of scares me.  Is cauliflower ever supposed to be purple, yellow, or green?!  It just doesn't seem right.  Which brings me to my current ponderance.  I've been making baby food for the past few months and thinking about what I would want Olivia to eat vs. what Jim and I sometimes put in our own bodies.  I've been trying to educate myself on what to buy organicly... here's a list if you're interested.  There are other lists out there and it seems like there are different variations, too. 

The down side to buying organic food is the price... but I guess you have to think about what kinds of chemicals you're willing to put in your body. 

Anyway, enough about that for now.  Here are a few things I've made that you might enjoy!  :-)

Avocado Grilled Cheese

I actually found this idea on Pinterest.  I heart Pinterest!  It's just grilled cheese (grilled on my fabulous grill pan) with some avocado slices.  Amazing!  If you like avocado, that is.  That link under the picture will take you to not a ton of grilled cheese ideas.  Check 'em out. 

Shrimp Creole

Straight from the Bayou to your table.  Just kidding!  I actually found a box (yes, I know, this goes against everything I was just saying about being careful about what to put in your body) of creole rice mix that you could add chicken or shrimp to... so I did.  It was in my pantry from I don't know how long ago.  Someday I'm going to try to make one of these versions of Shrimp Creole... they just seem like they would be better than a boxed version (thought it was mighty tasty and lasted me all week long!). 

Crescent Roll Pizza

Ugh.  Okay, I shouldn't start off that way.  Jimmy really liked this!  A complete Alissa original recipe.  :-)  Haha.  I thought it was kind of a flop. 

I sprayed a cookie sheet with olive oil and then put down some crescent roll dough.  Next, I added some sauce, chopped cilantro, shallots, chunks of mozzarella, bits of taco meat (because I always seem to have leftover taco meat in the fridge), and mushrooms (only to my side).  I baked it in a 350 degree oven for eh, about 8 minutes because my oven cooks everything at the speed of light. 

Don't get me wrong, this probably would have been amazing as an actual pizza.  You know, on pizza dough.  It was weird on crescent roll dough.  Jimmy scarfed it down, though.  Hehe.  So, I guess it wasn't a total flop. 

That's all for now!  I've been making lots of different salads recently... all of them good!  I'm going through a little corn-on-the-cob phase.  Does anyone make it a special way that's yummy?  I'd love to have some new ideas!  :-)

Healthy Schtuff

OMG.  My baby blog has taken over all of my blog time!  :-) 

Here are some yummy things I've made recently and haven't had time to post about...

Grilled Zucchini Rolls with Herbs and Cheese

Now, I will say that my zucchini rolls did not include herbed goat cheese because Jimmy couldn't find it at the store.  Where does one find goat cheese?  On a farm?  Well, we didn't go to a farm.  Maybe next time.  These were really good though!  I used my new grill pan (woot woot!) and cooked up the zucchini and then rolled them, which was not nearly as easy as it sounds. 

Jimmy thought they tasted like cheeseburgers.  Seriously.  I dunno.  You'll have to try them and see!

Crockpot General Tso's Chicken

I love love love that crockpot site.  It's very user-friendly and has about a million recipes that are easy and rated based on how much the chef's family actually liked them.  Plus, most of the recipes (if not all) are gluten-free and pretty darn healthy. 

I will say that this was nothing like the General Tso's you would order from a take-out place, but it was delicious in its own way and waaaaaaay healthier.  Worth it.

Broth Fondue!

Neal, Casee, Jimmy, and I have been having all sorts of fondue fun!  I may have purchased a fondue pot for Neal for his birthday and now we make him bring it over every time he comes to visit.  :-)

Barley?

Hey people... this is just a WW soup recipe I wanted to try since I had barley in the house.  I never have barley in the house.  Have you eaten barley before?  It's got an interesting texture to it.  It's quite different from rice and makes for a good change if you're looking for something healthy and tasty to try.  Here it is cooking:

Meat, Mushrooms, and Herbs, Oh my!

I just spent waaaaaaaay too long organizing my blog pictures.  My advice to you is that if you ever start a blog, make sure you have some system of organization from the beginning.  Not just a jumble of delicious looking pictures.  Yeah. 

Now that I have all kinds of folders and labels, I'm ready to show you what I cooked yesterday... more meat! 





Hearty Rice Casserole

I have no idea why this is called "Hearty Rice Casserole" and not "Hearty Double-Meat Casserole".  In my humble opinion, that would be a much more appropriate name.  Sooo much meat.  It smelled so good while it was cooking and I think it tasted even better leftover tonight.

Apparently I'm all about meat and mushrooms lately.  I'm not really sure why.  Everything I seem to cook has both!  What's up with that?

The good news is that they're not dead yet.  However, it doesn't look like the cilantro is really growing.  I shall keep watering it and see what happens! 

Off to bed.  I'm sooooo tired and that baby of mine is going to wake me up soon.  Thank goodness she's cute.  ;-)
