Mexi-Peppers and Witch Fingers!

Wow!  My blog is at an all-time low this year for the number of posts I've written!  That means two things:

1.  Life is CRAZY busy.
2.  I may have gotten a better handle on cooking.  

So, it's weird to think that my initial reason for starting a blog had nothing to do with cooking.  See?
I really just wanted to start a blog to get out my thoughts... and somehow that turned into this lovely collection of yummy recipes.  

I also can't believe that I started this blog 5 years ago.  FIVE?!  That's nuts.

I've come a long way.  Like... instead of following an exact recipe, I can concoct!  Ah, how much better is now that I can concoct!  Okay, don't get me wrong.  I still have a lot to learn.  For example, I've still never made a pot roast.  Or cooked Thanksgiving dinner (not that I want to, my uncle makes the best everything for Thanksgiving <3).  I don't know how to use Swiss chard.  Or bake bread.  Oh, the list could go on and on...

...but I got some free green peppers from a friend with a garden today and thought, 'Oh!  Those would be perfect stuffed with my chicken concoction from last night!'  Voila.  Dinner done.  Aren't they pretty?

 ...and here's what it looks like cut open!  Not so pretty anymore, but delish.  Though, I think I've decided that, in general, I like other colors of peppers better than the green ones.  They seem more subtle in flavor, I think.


So, for my Mexi-Peppers, I just cooked ground chicken and added taco seasoning, chopped onion, tomatoes, diced green chiles, reduced fat cream cheese, and a bit of garlic.  Two nights ago we used the mix in soft taco shells... or you could make enchiladas... or put it over a baked potato... or make a quesadilla... or put it in a salad... whatever you like!

OR... add the mess to a pepper of your choice and bake it.  I did 30 minutes at 350 degrees.

Top with fresh salsa, shredded cheese, sour cream, avocado, or whatever else you like and enjoy!  :-)

On a completely different topic, I have to tell you about my friend, the cotton candy grape.


For those of you who don't know the story, I became addicted to these last summer (2013) when I was pregnant.  This is bad news when these grapes are only available for a few weeks a year.  And you don't know that.  And you're pregnant.  Yeah.

Well, my lovely hubby found them this year and stocked up!  I actually still have a bag in my freezer that I've been slowly eating.  :-)

...and that same smart man found these today... witch fingers!!!  They are fabulously weird, juicy, and sweet.  I like them!


So strange!

What will they think of next?  ;-)

Cuts Through Chicken Flesh!

Recently, I got some awesome Pampered Chef stuff and have been having all sorts of fun playing in my kitchen with new toys.  :-)

*This post is not in any way an advertisement for Pampered Chef, but here's how I used some of my items to make a pretty tasty Buffalo Chicken Lasagna!  (I'm all about lasagna and Mexican food right now.)

Salad Chopper?  Not just for salad.

Thankfully, I didn't even have to touch the chicken.  My hubby cooked it up for me and then dumped it into the bowl and I went at it with my salad chopper aka super sharp scissors that cut through chicken flesh!  ;-)

We ate this as leftovers for most of the week and were both pretty excited about it every time we went to the fridge and saw it there.  I'd call that a success!  :-)

The below picture is of fresh salsa I attempted to make using a little manual food processor.  I didn't really follow a recipe, just threw some stuff in and hoped for the best.  Not generally the best way to go, but it sort of worked in this case.  I didn't enjoy the salsa just on chips, but it was AMAZING when added to tacos.

There is a Pampered Chef recipe for this recipe... I just didn't follow it.  I threw in onion, grape tomatoes, cilantro, lemon juice, and some cilantro.  You can throw in jalapeno, but I don't touch jalapeno peppers while pregnant.  See this post.

Best. Eggsalad. Ever.

Sorry friends!  I was almost too busy picking out paint colors to remember to blog.  Almost.  Here I am!  I have been de-wallpapering our basement from this terrible atlas wallpaper and looking forward to painting the walls something fabulous.  

I hope you didn't miss me too much... I mean, I haven't really given you much chance to miss me this week, have I?  I'm on a roll, but I can't promise anything over the weekend.  You just never know what will happen on the weekend.

For now, here's a picture of the best eggsalad in the world:

It certainly is not the best picture of an eggsalad sandwich, but I think that I've officially mastered eggsalad.  Should I reveal my secrets?  To you?  Hmm... mayhaps.

First, I will say that if you know me at all you know that my all-time favorite way to eat eggsalad is on a waffle.  A homemade Belgian waffle made with the Bisquick waffle mix.  That's normal, right?  I've made other kinds of waffles, but Bisquick is best.  Just my opinion.

I generally don't like anything crunchy in my eggsalad (or tuna, for that matter, but I did break that rule last night!).  Celery is not allowed near my eggsalad at all, so if you're a celery-lover, leave now.  I've also been trying to add veggies to everything I eat, so there might be fresh spinach and scallions on the sandwich, which breaks all kinds of Alissa-laws.

Anyway, you hard-boil some eggs.  I always put a pot of water on my stove and add the eggs right away.  Once it's boiling, I let the eggs sit in the boiling water for 15 minutes.  After 15 minutes, I turn off the heat and let them sit there until the water stops boiling.  I scoop them out with a big spoon and put them into a container in the fridge.  I NEVER have to worry about the eggs being hard to peel... and there's something nice about knowing how your eggs got hard-boiled *ahem ahem* (you know who you are).

Alissa's New Eggsalad Recipe
2 Hard-boiled eggs, sliced
1 t. Light Mayo
1 Laughing Cow cheese wedge (any kind, except blue cheese or swiss-yuck?)
Season with paprika, pepper, Old Bay, and ground mustard (or none of the above if you don't like them)

Put all of the above into a bowl and mix and then add to your waffle... er, sandwich.  Pita?  Flatbread?  Whatever.

Add tomato, avocado, spinach, scallions, etc. if you're feeling particularly adventurous.  It's really that easy.  Mmm... :-)

For dinner, I may have made some more Mexi-Rice Bowls, but with organic beef and a ton of grilled veggies.  I got compliments from both my dad and hubby.  Score!  Little did not seem at all interested.  She spit out the pearl onion, part of a red pepper, and the avocado I had her attempt to eat.  She did like the meat, though.  Baby likes meat.

So, brown rice, organic ground beef, avocado, fresh salsa, black olives, light sour cream, scallions, pearl onions, red onions, red bell peppers, and mushrooms.  Ahhhh-mazing.  

Have I convinced you to try it yet?  I love Mexican food.

Four Months Later...

Methinks you'll have to get used to once-in-a-while appearances from me from now on... I just can't keep up like I did before!  It might be a mix between having a toddler and not trying as many new recipes now that I have some cooking skill.

Since Thanksgiving, the hubs and I have been calorie counting and really trying to whittle down our weights.  I've been looking for lots of low-cal, delicious recipes and have tried a few things recently I thought I'd share with you.  So far I've lost about 16 lbs and am officially back down to pre-preggo weight (it sure took me long enough!).

Southwestern Egg Rolls

Alissa's Alfredo Lasagna

Okay, so this might sound like it's not-so-healthy.  It really depends on what you put in it.  I made it with RF ricotta cheese, a TON of spinach, lean ground beef, mushrooms, light alfredo sauce, and no-bake noodles.  If you portion it out, it's delicious and you don't have to feel guilty about it!  :-)

I have discovered the secret to yummy, light scrambled eggs... and I'm going to share it with you right now.  Are you ready?  Laughing cow cheese.  I've had this lunch almost every day for the past two months and it's filling, full of protein, and worth every calorie.

I use 1/2 c. of egg beaters, 2 wedges of any kind of laughing cow cheese, Old Bay, and pepper.  Sometimes I add mushrooms, spinach, a touch of lean ground beef... really, anything your heart desires in scrambled eggs is okay.  I like to put it on an English muffin (high fiber) with a Mushroom Lover's Morningstar veggie burger on the side.  I'm addicted.

Top with fresh salsa and a little guac or fresh avocado.  Heavenly.

Quinoa Pizza Bites

These were good, but I would recommend using pepperoni slices as suggested in the recipe.  They were good without, but needed something!  I also didn't have a tiny muffin pan, so I just baked them like cookies.

Alissa's Split Pea Soup

I made this with a bag of split peas... which I didn't realize would actually split or explode all over the pot as they started cooking.  I didn't take an after picture, but I should have!  I added potato, corn, chicken/veggie broth, mushrooms, and some spices.  It ended up thick and pretty tasty.

Next up...


Green Smoothies!  I've started having these more often lately.  Usually I add whatever we have in our house... banana, apple, strawberry, blueberry, etc.  Then you load it up with spinach or kale and add ice to get it the thickness you want.  I've been making them with soy yogurt and vanilla soy milk so that Liv can drink some, too.  Always yum.

This is exactly what it says.  I made brown rice and mixed salsa into it, added black beans, and topped with tilapia (seasoned however you like).

Homemade Mexican Pizza

We are huge fans of Cheeseburger Pizza and just switched the toppings a bit to make it Mexican.  On this pizza, I used taco seasoned lean ground beef, fresh avocado, grape tomatoes, black beans, corn, and shredded cheese.

I couldn't find the exact Taste of Home recipe that I used for the tomato soup, but there are so many there!  I might have to try some others.  :-)

For Christmas, I got an immersion blender... and it's AWESOME!  Here I am using it!  :-)

Emily Bites!

I feel like I talk about Pinterest a lot.  Do I? 
 
I apologize if that's the direction my blog has gone.  I'm just in love with how easy it is to find recipes (and DIY crafts for that matter) there.  A while ago, I stumbled upon a great site called Emily Bites.  She basically takes recipes that she's either found in other places, or created herself, and makes them a little lighter (sometimes a lot lighter).  For those of us tracking P+ with WW, it's quite helpful because she's got it all laid out nicely.  
 
Emily, you rock.  I just think you should know that.  I've also been sort of stalking your site lately.  I hope you don't mind! 
 
Here are a few recipes I've made from her site recently.  I have plans to try many more.  :-) 
 
Mac & Cheese Muffins

I didn't use elbow macaroni for these, as you can probably tell.  I used Ditalini pasta!  First, because I didn't have any elbow macaroni and I figured any pasta might work.  Second, I wanted to make some Ditalini pasta for my little one to try (it's perfect for baby fingers). 

On that note, I would strongly recommend NOT using Ditalini pasta for this recipe.  I think using another kind might get the muffins to stick together a little better.  Don't get me wrong... these were delicious, just a little messy!

I know what you're thinking... 'That's not a wrap, Alissa!'  You're right.  It's not.  I didn't have any in the house the first time I made these.  They actually were more like Bacon Cheeseburger Sloppy Joes.  Not too shabby!  I was sure to get some for the second time (see below).  :-)  I didn't toast them because I'm generally not a fan of toasting... is that weird?  I do think that when I make them again I may try toasting just for fun.

You may also have noticed a theme... we were kind of on a little bit of a cheeseburger kick.  Cheeseburgers might be one of my all-time favorite foods.  A friend of ours suggested putting a fried egg right on top of that pizza.  So, I guess you could do that.  It would certainly add to the points, though!  ;-)

How Do You Roll?

Ahh... summer break... I can cook again!  (Not that I haven't been cooking... I just haven't been cooking too many NEW things and/or blogging about them.)  It's actually been kind of nice to have a repetoire of go-to recipes to make. 

I do like to try new things, though.

Peanut Butter Rollup

I imagine that you make it in a similar way to making a pizza... except that you don't bake this... and you don't roll up a pizza.  I did say similar, not the same.  I've never made a pizza.  Maybe I should try that sometime!  I did once get a pizza delivered to my house that was still on the pizza pan.  Weird, huh?  Have I mentioned that I love Pinterest?

Anyway, these rollups were really good!  I liked them a lot with the jelly, but I would say that if you use jelly you should eat them the same day you make them.  Otherwise the jelly makes everything soggy and starts leaking all over your refrigerator.  Trust me on that one.  They just aren't as good without the jelly, in my opinion, so just keep your timing in mind.  I made them with jelly and then they were fantastic the next morning... but the NEXT morning, they weren't as good.  Does that make sense? 

Why do I feel like I'm rambling tonight?  I think I used the word jelly way too many times!  It's been a long day.  :-)

Happy Father's Day, by the way!  (If you're a Dad, of course).  I made my hubby some waffles from scratch, which I've actually never done before.  I usually use Bisquick for waffles.  I just like how they taste.  These were alright... but just not up to the Bisquick fluffiness standard that I've set for myself.

...and whatever else you want to add.  I added a dollop of taco sauce, sour cream, and guacamole right on top.  I would have added some black beans and corn if I'd had any in the house.  I looked.  ;-)

A Day of Cooking

Ugh.  I came home from work on Friday super frustrated with life.  Don't get me wrong... I have a very full life.  I love my family.  I like my job (most of the time).  Not too many people can say that!  It's just that life is a little too full at the moment.  I am counting down the days until summer vacation.  It can't come fast enough!

So, in order to try to give myself more time each night this week, I did a whole lot of cooking today.  My lovely husband, who does not get nearly enough credit for all that he does, went grocery shopping for me while I watched the baby.  Did I say that I love my family? 

Here's what I made:

Rosemary Lamb Stew with Spring Vegetables

Except that I used beef instead.  Lamb is crazy expensive and we are trying to stick to some sort of a budget here, people.  Plus, who wants to eat lamb?  Lambs are baby sheep!!!  :-(  If you eat them, they won't grow to their full potential and give anybody any wool.  Sheesh. 

Smokey Shrimp and Corn Soup

This is not for those allergic to shellfish *cough* Jimmy *cough cough*.  I'm eating some right now for dinner though and enjoying every bit.  Both of the above recipes were from the infamous WW recipe book that I can never find links to online.  I'll see what I can do. 

Veggie-Stuffed Shells

Absolutely no lactose in those... well, at least right now.  I may add some cheese directly to the top once I scoop some out.  They smelled really good while they were cooking and I'm excited to try some this week.  I love all things pasta.  There's also no meat, by the way.  Completely vegetarian. 

MORE Barley with Spinach and Asparagus

Yeah, I made this last week and it was so amazing that I made it again.  I didn't even take a new picture.  It looks exactly the same except that I accidentally added more onion than last time and I did add some leeks (on purpose) because I had one to use.  I like leeks. 

Anyway, if I have to cook this week, then there's something wrong.  Our refrigerator currently has a lot of yummy, healthy choices in it!  Go me!  :-)

Ugh, just ate a spoonful of onion.  I think I chopped/sliced/diced too many onions today.

Happy Leap Day!

Oh man.  I have a couple of recipes I need to post because they were so delicious!  I figured I should probably try to post them while it's still February, too.  I did cook them in February!

Chicken Alfredo Stuffed Shells
YUM.  We ate this for like a week afterward.  I did substitute half-and-half for the heavy cream and didn't put in quite so much butter.  I also had to wing it when making the sauce because I didn't have nearly the correct amount of cheese.  Despite all of that, it turned out mighty tasty.  I definitely recommend it!
Jelly Meatloaf!
Well, this is really called "Sweet & Sour Meatloaf" and I originally found it in an email from the Hungry Girl site.  However, I couldn't find it when I searched!  Wait!  I lied... here it is.  Ta da!  I particularly thought the edges of the meatloaf were yummy.  It tasted a lot like the jelly meatballs I've made before.

Yum!  I found this great site called Emily Bites!  Emily does indeed bite... into all sorts of yummy things.  It may be my new favorite recipe blog.  She basically takes recipes and makes them healthier.  That's exactly what I'm looking for in a recipe blog!  Check it out.

On that note, I am off to bed.  It was a long day and I'm not nearly ready enough for March to begin.  Are you?!

Cincinnati Chili

As you may or may not know, I'm a big fan of chili.  It's a staple in our house.  I generally make it using chili packets of seasoning and pretty much always follow the same recipe.  It's not tough. 

However, my favorite kind of chili is not exactly convenient to make.  I used to be able to find Cincinnati chili packets, but they no longer sell them around here.  The packets were convenient because you just add them to some meat and cook away.  Without the packets, the chili has to simmer for a looooooooong time to get all of the spices and flavors going.  If you follow my chili link above, it will take you to where you can actually order the packets.  OR... you can just try this recipe.  I crockpotted it up.  Yep, I made a new word there. 

I think the main difference with Cincinnati chili is that you serve it over spaghetti noodles.  Oh, and you put chocolate and cinnamon in it.  Sounds crazy, but it's amazing!  Mmm... as I was cooking it, the house smelled terrific and it brought back all kinds of good memories.  :-)

Now, I think if I make it again, I may try it without the kidney beans.  I know that you usually put beans in chili, but the way I remember having Cinicinnati chili is without them.  Kidney beans have never been my favorite anyway... although they apparently have all kinds of health benefits

Pie :-)

Big news!

I made my very first pie last night!  Nope, not cherry, blueberry, or lemon meringue...

It's nacho ordinary pie... *snicker snicker*.  Okay, that was pretty bad.  Just go with it, folks. 

Now, I know that you are probably shocked that the first pie I ever made falls into the Mexican food category.  NOT.  This pie was amazing.  So easy to make and easily customizable.  I added diced green chiles to mine.  You could easily add mushrooms, olives, tomatoes, or whatever else floats your delicious nacho boat.
