"I Need That Zucchini!"

...is what my 21 month old daughter says when she sees them now.  She also runs over to pick them up and hand them to me.  I may have created a monster!

So, people have been giving me extra zucchini that they've grown!  I like free yummy things!  :-)

To put it into perspective, I took these pictures...




 

...and now to show you some of the things I've made with all of this zucchini!  First, I went onto Pinterest, as anyone should do, and I searched for "zucchini".  You sure can make a lot of things with zucchini!

I give these two thumbs up.  They don't really taste like tator tots, which is fine... but more like little quiches.  I love quiche.  These are tasty.  I also did not feel the need for any dipping sauce, but you could certainly do that!

This next one was my own little experimental recipe... I chopped up 2 medium-sized zucchini and put them in a bowl.

Like so.

I then cooked them in a pan with some EVOO, pepper, garlic, pearl onions, and a bit of salt.

Then I added that mixture to whole wheat noodles and a light basil pesto sauce that I found at Wegmans.
Mmm... yum.

Very tasty!  We like anything that makes a lot of leftovers, too.  I shall call it... "Alissa's Zucchini Pesto"!

Stuffed Zucchini Boats

As you can see, I did not use chicken because I had lean ground beef in my fridge.  I also didn't add corn.  You can really make these by putting any sort of mixture into them.  They were pretty good, but the zucchini was still pretty watery after baking.  I'm not really sure how to eliminate all of the moisture!  Any suggestions?

Soft Zucchini Cookies

My name for these is way better, I think.  ;-)  I mostly followed the recipe... although I used greek yogurt instead of shortening and added raisins, white chocolate chips, and coconuts.  No nuts.  

I will say that I had the same moisture problem with these and I'm fairly certain it's the zucchini factor!  They were AMAZING right out of the oven, but then when I put them into an air-tight container, the moisture got trapped.  What do I do about this?

It kind of looks like a green, bubbly mess... but here's what's in it:
2 bananas, grapes, blueberries, strawberries, greek yogurt, vanilla almond milk, about a cup of spinach, and a whole mess of zucchini

Both baby and husband approved.  It was delicious!

I'm pretty sure I just flat out did these wrong.  Hehe.  First of all, when you look at the picture, it gives you an idea of how much zucchini we were trying to fit on one pan.  They didn't come out like chips, but more like warm zucchini rounds seasoned with Old Bay and garlic salt.  Not bad, but not what we were going for here!  

Ah well. 

...I think that's about it so far.  We've done lots of zucchini grilling on our grill, too.  Keep those zucchini coming!  Well, after I've used what's in my fridge.  ;-)

Happy Father's Day!

...to all those dads out there.  *claps enthusiastically*

For my hubby, I made these:

He's a good dad and deserved something tasty.

If I'm giving my honest opinion, I think the Cinnamon Toast Crunch muffins I made for his birthday were way better.  It could be because we both almost burned our mouths eating these fresh from the oven, though.  Hard to say.  ;-)

Hubby saw the muffin tin soaking in the sink today and said, "Mmmm... what delicious thing came from that?"  So, I couldn't very well break his heart and tell him I was soaking it because I made muffins out of macaroni the other day and the gunk still wouldn't come out if it (despite being scrubbed, dishwashed, and scrubbed again).  Okay, maybe I did tell him that.  BUT... then, I proceeded to thoroughly clean it again and made delicious muffins.  So that's okay, right?

Macaroni muffins, you ask?  Well... I will tell you all about them!  

I was watching Noodle and Doodle with my little lovey.  That link will take you to some recipes that they make on the show.  We watched the episode "A Trip to the Lake" apparently and it included directions on how to make Frittata Boats.  As we were watching, I was thinking to myself that we had all of the ingredients in our kitchen and nothing in particular for lunch... so away we went.

Cook the noodles.

Add other ingredients and mix in a bowl.

SPRAY the pan before scooping ingredients.  

I think that's where we went wrong.
Definitely forgot to spray the pan before baking.

Scrape unsprayed remnants out of muffin tin.

Struggle with muffin tin until you have a pile of stuff.

Haha, so they were okay.  Obviously, we didn't make the sail part since we had trouble with the muffins staying together after I had to forcibly remove them from the pan.  Oh well!  

I used the rest of the macaroni I cooked to make a somewhat healthy version of mac & cheese... which we then gobbled up for lunch.  

All that was left!

Miso...

I'm attempting to be productive today... semi-productive, at least.  

As part of my attempt, I made some Miso Soup for lunch today.  I've been feeling it lately and since today isn't quite as hot as it has been over the past week, I turned on my oven.  During the day.  I know, crazy, right?  

So, I found these "miso soup" packets at the grocery store the other day and immediately stepped away from the because of the sodium content.  WOW.  Craziness!  It was funny because that same day, a friend of mine was talking about how she had just made miso soup using a miso paste that she found at Wegmans in a refrigerated aisle.  

So here's what you do... if you're me, you follow the directions on the tub.  

Saute onions in a T. of EVOO.

Add some sort of veggie... I added celery because I'm trying to get rid of it.
Celery is NOT my friend. 

Add 2 cups of water or broth.
I used veggie broth, again, because I had it.  Water is easier.
Simmer...

Miso Paste!  Weird!  It comes in a tub like sour cream.

Simmer it up some more after adding miso paste to taste.

I think my first attempt was okay.  The next time I make it, I think I'll add less onion than it suggested and probably not put in celery.  I also added in some tofu because it made me think of sushi restaurants I've been to where the miso soup is amazing.  I see lots of potential here.

I also made some little English muffin pizzas for my little one... okay, okay, and maybe for me, too.


They were a hit!  ;-)

Fondue and Grilling Fun!

I hope you had a nice weekend... it was a busy one for us!  We went to a cookout, had a fondue night (just barely!), had lots of playground time, worked on the house, bought a new sofa, and I feel like the list goes on and on... 

I feel productive, yet exhausted.  Though I didn't feel exhausted until today.  In the rain.  The gloomy, gloomy rain.  Why does rain make you feel like that?  Is it just me?  I wasn't even all that tired today (and I do know tired), but I could probably have taken a solid 2-hour nap.  If I napped well.

I digress.  

It's the food you're here for, isn't it?  

First off, Fondue Sunday with Neal and Casee!  :-)  

They sure do look like a weird bunch, don't they?  (Love you guys!)

Things I learned on Fondue Sunday:

1. You can solder a cord and finagle it so that it works (if you can't find the real fondue pot cord because you moved).  Thanks hubby!

2. Hard cider is delicious.  Seriously, Angry Orchard?  Do it.

3. There's a fine line between cheese fondue and a big lump of gooey cheese that barely counts as fondue.

4.  Fondue pots are not easy to clean when they are filled with gobs of cheese.

5.  You cannot take a picture of someone stirring fondue without it being a blurry, action shot (See below).


We used a vegetarian broth base and then added some garlic, Worcestershire sauce, ground mustard, and cheese (Sharp Cheddar and Colby Jack).  Now, it's been a long time since we've had a fondue night, but I've found that pretty much whatever you put into a cheese fondue is delicious.  Tomatoes, mushrooms, tofu, apples, carrots, celery, oh, and crusty bread.  Rock on.

I heart fondue.  :-)

Oh, and yes, Jimmy did indeed solder a cord to make our fondue pot work.  We probably spent an hour looking for the cord and couldn't find it!  Ugh.  (I still haven't found it, for the record.)  I thought for sure it would show up immediately after we made the fondue.

Next up... last night's dinner.  I would say that this was something I would never have eaten as a child.


Chicken Sausage with Grilled Onions, Mushrooms, Tomatoes, and Carrots

I'll be honest.  Not my favorite.  Here I was, trying to like sausage.  What was I thinking?  I'm just not a fan!  With the exception of the Hot Creamy Sausage Dip my mom used to make.  Click here to see the blog post where it was included.

By all means, if you enjoy sausage, cook some up!  I got chicken sausage that was already de-cased or whatever you call it.  I HATE de-casing sausage.  It's icky.  Anyway, since the sausage was already de-cased, it was certainly one of the easiest meals I've made in a long time.  Just chop everything up and throw it on the grill pan.  Enjoy!  :-)

Okay, this post is getting out of hand.  Bear with me!  Here's what I had today...

Moooooore Eggsalad!  (On an Arnold Sandwich Thin)

Can I tell you that it was amazing?

For dinner, I was going to make Grilled Eggplant with a side of Red Pepper Sauce.  Then I realized that you actually need to have a real grill to make that happen.  So, I chopped up an eggplant and grilled it with some mushrooms and red pearl onions (better than the white, yum!) and applied it to some spaghetti noodles with tomato sauce and roasted red peppers.  Mmmm...

Not exactly the prettiest dish, but it was delicious.  AND... it made enough leftovers so that the hubs has lunch for a week.  I'm not kidding you.  A WEEK.  Score!

What's Your Favorite Food?

I'd like Friday night to be Pizza Night.  

It's funny, most of the time if you ask people what they're favorite food is, they say pizza.  (Is it your favorite food?)  I don't know if it's because they can't think of any other foods when they're asked the question or what.  I wouldn't say that pizza is my favorite food, but I sure do like it.  

Anybody else have a pizza line in high school and eat pizza every single day?  With tater tots?  Mmm.  *mouth waters*

*Side note: I was recently introduced to the idea of crab tots, which sound amazing.  I've never had them, but I may have to try them for the blog's sake.  Don't worry, I won't feed them to my shellfish-allergic husband.  

Back to PIZZA!  I made one tonight using a whole wheat pizza crust.  
 
Add chunky pizza sauce and pizza cheese... 

Add sliced up turkey bacon...

Add mushrooms for ME and ham for the hubs...

Um... a touch more cheese...

Cook!

Something kinda funny... I may have gotten that pizza pan from a delivery place years ago.  When they delivered the pizza, the pan was definitely still in the box.  Thank you for the pan whatever delivery place gave it to me with my pizza!  I hope I tipped you well!!!  

You know as well as I do that you can put anything on pizza.  That's why it's so amazing.  Lately I've been doing lots of English muffin pizzas for my little one.  It's a great way to keep the portion size smallish.  I think she kinda liked this pizza tonight though... she definitely ate all of the toppings right off it.  Can't say I blame her.


Oh!  ...and for your viewing pleasure... I present to you... *dun dun dun!* ...my favorite way to eat MY favorite food (and my lunch today)...
